How to Make Alfaham Masala

Alfahm is an Arabic grilled chicken. This chicken recipe is very popular in the middle east as it is marinated with Arabian spice and barbequed in a charcoal grill or in the oven. 




Ingredients
For marination

1 tomato
½ onion
4-5 cloves of garlic
2 big pieces of ginger
1 big lemon
1 ½ tbs arabic masala
1 tbsp chilli powder
½ tsp turmeric
Salt as required
1 ½ tbsp olive oil
¼ tsp red food colour
1 ½ or less kg chicken with skin
1 tbsp olive oil
1 piece of charcoal
For masala
2 tbsp whole coriander
1 tbsp pepper powder
1 tbsp fennel seeds
1 tsp cumin seeds
1 tbsp cinnamon
1 tbsp cardamom
1 tbsp clove
1 dried lemon
4-5 bay leaves
4-5 red dried chilli. Preparation

Add tomatoes, onions, garlic, ginger and lemon juice and grind them well

Add the masala mix to it and 1 1/2 tablespoons of olive oil and mix well

Wash the chicken thoroughly, cut the breast and flatten it

Leave slits on the chicken to apply masala and keep it aside for at least 6 hours

Add 1 tablespoon of olive oil to a non-stick frying pan and cook the chicken over low heat while hot

Turn the sides for even cooking for 10 minutes and cook

Burn a piece of charcoal

Put oil in a bowl and place it in the frying pan

Add the burned charcoal into the bowl and cover with the lid for 2 minutes

Serve hot.
